Key Lime Ice Cream Sandwich

The weather outside is gorgeous today and I think it feels like fall officially. Florida fall is fleeting, and it can go back to 95 degrees next week but I am welcoming it with open windows and pumpkin bread this weekend.

Here is a nice way to relish in the last of summer next week when it is back to 95:

Key Lime Ice Cream Sandwich: Adapted from The Neely's

1 can sweetened condensed milk
1 1/2 cups heavy whipping cream
3/4 cup key lime juice
1 teaspoon lime zest

Mix together ingredients and chill in metal bowl until cold. Mix in an ice cream maker for 25 min. Place in freezer until solid.

Place between two graham crackers and devour.
